Lemon Garlic Chicken with Spaghetti and Tomato

So much healthier and tastier than it sounds, I went back for seconds... and I am highly critical of my own cooking! Inspired by a recipe from Pinterest.

Lemon Garlic Chicken with Spaghetti and Tomato

serves 2-4 people
average cost ~ £.3.90 for the recipe


Ingredients

2 boneless skinless chicken breasts, diced

For the marinade:

2 lemons, juiced and zested
1tb dried rosemary
4tb corn oil
seasoning to taste

(combine and marinade chicken overnight)

For the spaghetti and sauce:

2 1/2 cups chicken broth
1 large onion
1tb mixed herbs
2tb garlice puree

1/2 pack spaghetti

Garnish:
4 tomatoes cut into 8s, 
or 16 cherry tomatoes, grilled.

Sautee onions and garlic together,
Combine with stock and herbs.
Add spaghetti, cook out.
DO NOT STRAIN.
Keep the spaghetti in the sauce.

Sautee chicken in pan, include the rest of the marinade.

Serve chicken on top of spaghetti and broth, with tomato garnish.

Tex Mex Sides... Arriba!

Why buy shop bought when you can just make it in the time it takes to open the fridge and open a jar? 

Its fresh, its tasty, its sooo much healthier, so much cheaper and better for you than shop bought, as there are no added chemicals and you know exactly what you're putting in your recipes!

Guacamole
Average cost for this recipe amount:
£3.27

Average cost for premade:
£6 +

Serves 4-6 hungry people

4 ripe avocados, skinned and pitted
1 tomato, quartered
1 lime, juiced
1 onion, chopped
1/2 bunch coriander
seasoning

Just dump it all in a food processor, and blend to the consistency you want! 

See? Easy Peasy!

Refried Beans
Average cost for this recipe amount:
£0.54

Average cost for premade:
£2.50 +


Serves 4-6 hungry people

1 can of baked beans, drained (keep the sauce)
1/2tb chilli flakes
1/2 chopped onion
seasoning
2tsp garlic puree

Put the everything except the sauce into a food processor.
Blend, and add the sauce until you get a slightly runnier consistency than you want.
Cook in a frying pan, until it reduces to your desired consistency. 
Serve.



Spice and herb mixes

I have decided to start creating my own herb and spice mixes. Its expensive in the beginning, buying all the spices in bulk,  but its cheaper and tastier in the long run, and you can adjust the flavours to your taste....

So, I thought I'd share my recipes with you!

Taco Bell Seasoning:

This is a copycat seasoning recipe I found on Pinterest. Smells and tastes AMAZING.


1tb flour
1tb cornflour
1tb dried onion
1tsp beef bullion
1tsp garlic powder
1tsp paprika

 ( I use smoked paprika. Its expensive, but worth it)
1tsp chilli
1/4 tsp cayenne
1/4 tsp sugar

Combine all ingredients, given them a good shake, and store in an airtight container.

This amount will season 800g of mince for a tasty tasty taco.

Creole Seasoning:

A great smoky, spicy seasoning mix. 
Good for beef, pork, chicken, and ribs.


1tb dried onion
1tb garlic powder
1tb oregano
1tb basil
1/2tb thyme
1/2tb pepper
1/2tb cayenne
2 1/2 tb paprika
1 1/2tb salt

Combine and add to sauces, or use as a rub on meat with a little oil.

Za'atar

A middle-eastern seasoning used to flavour fish and vegetables, or use in olive oil as a bread dip.


1/4 cup sumac
2 tb thyme
1 tb roasted sesame seeds
2 tb marjoram
2 tb oregano
1 tsp coarse salt
